Bayou Brownies

1 cup chopped pecans
½ cup butter, melted
3 large eggs
1 18.25 oz pkg. yellow cake mix
1 8 oz pkg. cream cheese, softened
1 16 oz pkg. powdered sugar

Combine pecans, butter, 1 egg, and cake mix, stirring until well
blended; press in bottom of a lightly greased 13 X 9 X 2-inch pan. Set
aside. Combine remaining 2 eggs, cream cheese and powdered sugar in a
large bowl; beat at medium speed until smooth. Pour cream cheese
mixture over cake mix layer. Bake at 325 ° for 40 minutes or until
cheese mixture is set. Let cool completely in pan on wire rack. Cut
into squares. Yield: 15 brownies.

Subject: Baked Pork Chops with Peppers


Baked Pork Chops with Peppers Recipe By :Teri R. Foster

6 pork loin chops -- about 1 1/2 inches thick each
2 tbs. olive oil
2 bay leaves
1 tsp. chopped fresh rosemary or 1/2 tsp. dried
Salt and pepper -- to taste
½ cup dry white wine
3 tbs. olive oil
3 anchovy fillets -- rinsed and patted dry
1 tbs. minced fresh parsley or 1 tsp. dried
Dash sage, oregano, and nutmeg
4 large bell peppers -- cut into thin strips

Preheat oven to 400º F. Place loin chops, 2 tbs. olive oil and bay
leaves in baking dish. Sprinkle with the rosemary, salt and pepper.
Bake, uncovered, for 30 minutes. Add the wine and bake for 15
additional minutes or until chops are done, basting frequently with
pan juices.

Meanwhile, heat 3 tbs. of oil in large skillet over medium heat. Add
the garlic and sauté until tender but not browned. Stir in the
anchovies, parsley, sage, oregano and nutmeg. Immediately add the
peppers and sauté until tender, about 15 - 20 minutes. When chops are
done, lower the oven temperature to 300º F. Add the peppers to the
chops and bake for 5 - 6 minutes. Spoon pan juices over chops. Serve
with rice, noodles or fried polenta

Subject: Spicy Chicken Drumsticks


Spicy Chicken Drumsticks

4 servings
4 tbs. sugarless tomato ketchup
1 tbs. mild curry powder or to taste
2 tbs. lemon juice
8 chicken drumsticks, skinned

1. Mix the ketchup with the curry powder and blend in the lemon juice.
Rub over the drumsticks and leave to marinate for at least 30 minutes.

2. Place the drumsticks on a rack in a roasting tin. Bake at 350°F for
30 minutes or until golden brown. Leave to cool.

Joyce's Fried Green Tomatoes

GREEN TOMATOES (1 medium tomato per serving)
1 Cup YELLOW CORN MEAL
1 TBS. GARLIC POWDER
1 TBS. ONION POWDER
½ TBS. SALT
1 TSP. PAPRIKA
2 EGGS
1-2 cup VEGETABLE OIL

Slice the tomatoes by first cutting out the stem, then slicing off the
rounded bottom and top. Then with the tomato on it's side slice in ½
in slices. Combine and mix the dry ingredients together in a plastic
bag or a deep wide bowl. In a small bowl whip the eggs until golden.
Take a large skillet and cover the bottom with 1/4 inch of oil,

heat the oil until it is very hot. Dip the tomatoes first into the
beaten egg, then either shake or dip them in the Cornmeal mixture,
then carefully slide them into the hot oil. Watch the sides of the
tomatoes, when they look light brown turn with spatula.. When done
simply drain on paper towels. Enjoy!!

Subject: Old Fashioned Cornbread Dressing #3

OLD-FASHIONED CORNBREAD DRESSING #3

2 cup self-rising cornmeal
2 eggs beaten
2 cup buttermilk
2 tbs. bacon drippings, melted
3 stalks celery, chopped
1 medium onion, chopped
1/3 cup butter or margarine, melted
12 slices day old bread, crumbled
2-2 ½ cup turkey or chicken broth
1 cup milk
2 large eggs, beaten
¼ tsp. salt
1 tsp. poultry seasoning
½ tsp. rubbed sage
¼ tsp. pepper

Combine cornmeal, 2 eggs, buttermilk, and melted bacon drippings,
stirring well. Place a well-greased 10-inch cast iron skillet in a 450
degree oven for 4 minutes or until hot. Remove skillet from oven;
spoon batter into skillet. Bake at 450 for 35 minutes or until
cornbread is lightly browned. Cool; crumble cornbread into a large
bowl. Sauté celery and onion in butter until tender. Add sautéed
vegetables and remaining ingredients to crumbled cornbread, stirring
well. Spoon dressing into a lightly greased 13 x 9 x 2-inch pan.

Bake at 350 for 25 to 30 minutes. Yield 8 servings.

HINT: One (10 3/4 oz) can of chicken broth and 1 cup of water may be
substituted for homemade chicken broth. ( It's best to use the broth
from your turkey).

Dressing may be spooned into turkey cavity. Spoon any remaining
dressing into a lightly greased 2-quart casserole; bake at 350 for 25
to 30 minutes.

Brown Sugar Pound Cake
1 box light brown sugar
¾ cup butter (softened)
¾ cup shortening
6 eggs
½ tsp. baking powder
½ tsp. salt
1 cup finely chopped black walnuts
1 cup cane sugar
3 cup plain flour
1 cup condensed milk
1 tsp. black walnut flavoring

Cream together; butter, shortening, brown and white sugar, and eggs.
Sift all the dry ingredients together and add with the milk and
flavoring, mix well. Fold in the nuts just before pouring into a
greased and floured tube pan. Bake at 325° for 1 hour and 20 mins

Subject: Oktoberfest ,Cooking Bratwurst

OKTOBERFEST FUN and BRATWURST

Well It is Oktoberfest time I usually get some requests for how to
have a fun Oktoberfest get together and cook Bratwurst. With the
German music and the crisp weather, some good hearty German food and
beer this is the perfect way to bring in the fall.

Buy enough Bratwurst to go around-at least 1 per person. Anyone with a
hearty appetite will want "seconds."


STOVETOP METHOD

1.Prick each sausage with a sharp fork, to keep them from bursting
during
cooking.
2. Put into a skillet with about½ inch of beer(preferebly a dark beer)
or water, and cover.
3. Cook over medium heat till beer or water is evaporated.
4. Uncover and brown a bit, over low heat, in the small amount of fat
left in the skillet.
5. For added flavor add 1 or 2 onions cut into strips after the brats
are browned and cook till onions are soft and browned a bit.

BBQ METHOD

Follow the stove top method for the first 3 steps. This can be done a
day ahead.
Transfer the blanched bratwurst to the BBQ and cook till brown and
plump.
Blanching the Bratwurst first insures that they will be done on the
inside when they are the perfect browness on the grill.

Be sure to have some good mustard, like a German deli mustard with the
seeds still in it or a sweet hot mustard is what I use in the
restaurant. You can add some honey to mustard to give it this same
quality. Also sauerkraut is a must to have for those that want it.

These are very good with Hot German Potato Salad, Sauerkraut or
Sweet-and-sour red cabbage. Potato pancakes are a perfect
accompaniment, also.

If you want to get an Oktoberfest Beer, Paulaner is exceptional,
Spaten is good also. These are both old German brewerys. They are
generally available in many grocery stores during this time of year.
An Oktoberfest beer is made in March and fermented in the keg until
Oktoberfest time about September. It has a special flavor, which is
mild and light amber. Oktoberfest in Germany always starts with the
traditional tapping of the keg.

Go get some good Om pah music or download some from the net. Turn on
and enjoy.
It is hard to not smile and be happy with this fun music, before long
you will feel like clapping your hands and stomping your feet or doing
a polka or the chicken dance.

Subject: Freezer

Ham Stroganoff
Serves 8

Ingredients

1-1/2 packages (8-oz.) noodles
1/2 cup butter or margarine
1 cup onion, finely chopped
2 cloves garlic, finely chopped
12 ounces canned sliced mushrooms, drained
2 pounds fully cooked canned ham
3 tablespoons flour
16 ounces tomato sauce
1/2 cup red Burgundy wine
2 (10-1/2 oz.) cans condensed beef bouillon
1/2 teaspoon pepper (I'm omitting the salt because of the ham)
2 cups sour cream
1 cup parmesan cheese

Directions

Cook noodles according to package directions, drain and set aside.
Saute onion, garlic and mushrooms in butter until tender. Remove and discard
gelatin and excess fat from ham and dice. Add to onion mixture; heat,
stirring 5 minutes longer. Take from heat and stir in flour, tomato
sauce, Burgundy wine, beef bouillon and pepper. Simmer 10 minutes,
stirring occasionally. Remove from heat; stir in sour cream.

Divide into suitable potions for your use and place in greased
casseroles in following manner: Layer 1/3 of noodles; top with 1/3 of
ham mixture; repeat layering twice. Freeze.

To serve: defrost and sprinkle with 1 cup parmesan cheese per 8
servings. Bake, uncovered at 375 for 25 minutes.

Crab and Mushroom Casserole
Serves 6

Ingredients

1 pound mushrooms, sliced
8 tablespoons butter, divided
1/3 cup flour
10 ounces chicken broth
1-1/2 cups medium or light cream
salt and pepper, to taste
1-1/2 pounds fresh crabmeat OR
2 cans canned crabmeat
buttered bread crumbs
American cheese, grated

Directions

Saute mushrooms in 2 tablespoons butter for 5 minutes and set aside.
Melt 6 tablespoons butter. Remove from heat and blend in flour. Add
chicken broth, cream, salt and pepper. Return to heat and cook until
thickened and smooth.

In 6-cup casserole arrange in alternate layers the mushrooms, sauce
and crabmeat. Sprinkle with bread crumbs and cheese. Freeze.

To serve: Put frozen casserole in 325 degree oven. Bake until brown
and bubbly, 45 to 60 minutes. Defrosted casserole bakes at 350
degrees for 30 minutes.

Sourdough Biscuits

1 c. sourdough starter
1 1/4 c. flour
1 T. baking powder
1 t. sugar
1/2 t. baking soda
1/2 t. salt
1/2 t. butter
1/2 c. milk or buttermilk


Prepare the batter the night before. Mix dry ingredients together
in a bowl and cut in butter using forks or pastry blender until
the mixture looks grainy. Mix milk into the batter and stir into
dry ingredients. Knead the dough until smooth, roll dough out to
1/2" thick and cut with biscuit cutter or upside-down cut or glass.
Place on cookie sheet one inch apart and bake at 400 degrees for
15 minutes

Green Tomato Pie
4 c. sliced green tomatoes
3/4 c. sugar
pinch of salt
cinnamon & nutmeg
2 T. flour
2 T. melted butter
unbaked pie shell

Add sugar, salt, cinnamon and nutmeg to the thin slices of green
tomatoes. Stir in the flour for thickening. Place the tomato mixture
in an unbaked pie shell. Drizzle the melted butter over the top.
Weave a lattice top or cut a pine tree pattern in the top crust to
release steam. Crimp the edges. Bake at 400 degrees until filling
is bubbling hot and the crust is golden brown,

Household Tips
Repair Cast-iron Cookware
Did you know you could repair cracks in old cast-iron cookware? Here
how you do it. Beat some egg whites to a froth, then add enough
powdered quick lime to make a consistent paste. Take some iron file
dust and stir it into the paste until it gets thick. Fill the cracks
of your ironware with this cement. Wait at least a month before you
use the pan.

Keep the Flies Away
Brush your screen doors with kerosene to prevent flies from entering
the house every time someone opens the door.

Better than Bleach
Make a faded old dress perfectly white by boiling it in cream of
tartar water.

Sausages and Fried Apples ~
Prick the sausages well with a fork. place in a deep frying pan; pour
in enough boiling water to cover the bottom; cover and cook over a
moderate fire. When the water evaporates remove the cover an turn
several times that they may be nicely browned. Turn onto a platter.
Core a number of large tart apples cut them in rings an inch thick
and fry in the sausage fat. Garnish the sausage with the apples and
serve.

Apple Sandwich
Cut lady-finger cakes in halves and spread with apple sauce; press
halves together and cover with whipped cream and walnuts chopped fine.

1-12 oz bottle chili sauce
1-16 oz can cranberry sauce
1-16 oz pkg low-fat Healthy choice smoked sausageIn large saucepan
mix all ingredients together. Place over low heat and simmer for at
least two hours. Or cook all day on Low in crockpot. Serve over
rice.
16 gm fat for entire dish

Cabbage Roll Casserole

6 cups shredded cabbage and carrots
3/4 lb cooked extra lean ground beef
1/2 tsp salt
1/4 tsp pepper
1 medium onion, chopped
1 cup raw long grain rice
1-26 oz can low fat chunky spaghetti sauce
1/2 cup water
1/4 tsp dried basil
1/4 tsp seasoned saltPlace half the cabbage and carrots in crockpot.
Crumble ground beef over top. Sprinkle 1/4 tsp of the salt and 1/8
tsp of pepper over beef. Evenly spread onion, the rice over top. Top
with remaining cabbage, salt, and pepper. Combine spaghetti sauce ,
water, basil and seasoned salt.
Pour over cabbage. Cover and cook on Low 5-6 hours or until rice is
tender.

Low-fat Meat Loaf
1 lb extra lean ground beef
2 cups shredded cabbage
1 medium green pepper, diced
1/2 tsp salt
1 tbsp onion flakes
1/2 tsp caraway seeds (optional) .Combine all ingredients. Shape into
loaf.
Place on rack in crockpot. Cover and cook on High for 3-4 hours

Chicken Bonne Femme....Weight Watchers
1-3 lb chicken cut into 8 pieces
2 cups frozen baby onions
2 cups whole baby carrots
1/2 lb new or red potatoes, cur into 1" chunks
1 1/2 cups low sodium chicken broth
2 medium celery ribs, cut into 2" pieces
2 strips turkey bacon, diced
bay leaf
1/4 tsp dried thyme
1/4 tsp black pepper
1/4 cup minced fresh parsley
2 tbsp fresh tarragon or mint, minced
1 2" strip lemon zest, minced
2 tbsp fresh lemon juice
1/2 tsp saltIn slow cooker, combine chicken, onions, carrots,
broth, celery, bacon, bay leaf, thyme and pepper. cook on Low
8-10 hours. Meanwhile, in small bowl, combine paersley,
tarragon, lemon zest and juice. Set aside. With slotted spoon,
remove chicken and vegetables to heated platter. Cover with
foil and keep warm. Skim off and discard any fatfrom liquid in
crockpot. Stir in parsley mixture and salt, spoon over chicken
and vegetables.

Healthy Chicken Chowder
1/2 cup shredded carrot
1 cup skim milk
1/2 cup chicken broth
1/4 tsp black pepper
1/4 tsp onion powder
1 potato, peeled, cut into 1/2" chunks
4 chopped green onions
1/2 lb boneless skinless chicken breasts, cut into 1" cubes
2-15 oz cream style corn
1/2 cup shredded cheddar cheese
1/4 cup mashed potato flakesMix all ingredients except cheese and
potato flakes in crockpot. Cover and cook on Low for 5-6 hours or
until potato is tender and chicken is no longer pink. Stir in
potato flakes and cook on High, uncovered for 5 minutes until
chowder has thickened and flakes have dissolved. Top with cheese
before serving.per serving: 367 calories,
45 mg cholesterol, 8 g fat.
