Subject: Chinese Peanut Sauce
Peanut sauce is becoming big over in the Northwest. I have been
looking for a good one.
This is one I am very happy with, because it is basic and simple. It
also went over well at the restaurant. I would like to try some of
your peanut sauce recipes as well.
A simple favorite is to boil Ramen noodles and drain the water and mix
some of this sauce in. Ummm. It is also good when you saute strips of
chicken , or pork.
Chinese Peanut Sauce
1 hand full of fresh cilantro sprigs( can be more or less)
1/2 c. chunky peanut butter
3/4 c soy sauce
6-8 cloves garlic, peeled
1-3 Tbs sugar, to taste
1/2 -1 Tbs vinegar.( like white, rice or cider )
1 /2 teaspoon dark sesame oil
hot sauce to taste
Add the ingredients in a food processor and pulverize well.
The sauce will keep for a week or more in a well-seal jar in the
fridge.It tastes better after it has sat a bit.

Subject: Macaroni and Cheese
I use this Macaroni and Cheese recipe. It comes from Soul Food recipe
book, by Sheila Ferguson. It is great.
MACARONI and CHEESE
2 lg. eggs well beaten
2 tbsp. salt
2 cups uncooked macaroni
1/4 cup softened butter or margarine
2-21/3 cups evaporated milk
1 1/2 lbs. sharp, shredded, cheddar cheese
paprika
cayenne pepper (opt.)
Cook macaroni according to package instructions. Do not over cook.
Rinse macaroni in cool water quickly, drain and add butter.Pour beaten
eggs into the milk. Cayenne can be added to this if you so desire.
Put a layer of macaroni in buttered 2 qt. casserole dish, and layer
with some of the cheese.Repeat lyers until last layer is cheese.Pour
the egg and milk mixture on top, forking it to mix milk mix through.
Top with paprika. Bake 350 degrees for 45 minutes, or untilbrown and
bubbly.

Subject: Earthquake Cake
1 1/2 cup pecans, chopped
1 3 oz. can coconut
1 Box German Chocolate cake mix
1 Stick margarine
1 8 oz. package cream cheese, softened
1 Box powdered sugar
Grease 9 X l3 inch pan. Sprinkle pecans in bottom of pan. Sprinkle
coconut on pecans.
Prepare cake mix and pour over pecans and coconut. Melt margarine and
cream cheese together, add powdered sugar and mix well. Pour over cake.
Bake at 350 degrees for 45 minutes. Remove from oven and cool. Cut
into squares.
