I'm putting together a recipe booklet for my
company's Black history month presentation. I'm
looking for recipes that have been pushed aside
such as hog head cheese, souse meat, cha cha,
fish rolls, etc.
During slavery black people made a delicacy out
of a lot of throw-away food so that's what I'm
looking for. Things you don't really hear of
today -- at least not in California.
Also food that is recycled into something else
i.e. today's mashed potatoes are tomorrow's
potatoe cakes. If my grandmother were still
alive my booklet would be filled by now. Any
help is appreciated.

Subject: Cream of Wheat Pancakes recipe

1 cup pancake mix
1 cup plus 1 Tbl cream of wheat
1 1/3 cup milk
1 Tbl confectioners sugar
2 eggs
1 Tbl vegetable oil
Combine pancake mix, confectioners sugar and cream of wheat in
large bowl. Beat eggs with wire whisk in seperate bowl. Add
milk and oil to eggs; whisk well. Add wet ingredients into dry
ingredients. Stir very well.
Pour onto hot griddle and cook until bubbly, turn and cook until
golden brown

Subject: Skillet Banana Upside Down Cake

Banana Upside Down Cake
Make in Iron Skillet
1/3 cup butter
1 cup of brown sugar
½ teaspoon cinnamon
2 Tablespoons rum
3 large bananas, sliced horizontally
1 box of golden butter recipe cake mix
2 eggs
1 ½ cups whole milk
¼ lb. Butter, melted (1 stick)
4 tablespoons lemon juice
Cooking instructions:
In skillet, melt butter, brown sugar, cinnamon and rum. Place
bananas and sauté. Mix together cake mix and remaining
ingredients. Pour over banana mixture in skillet and bake at 350°
for 45 minutes until cake is done. Serve warm with ice cream.
