Red Snapper Recipes: Quick Grilled Fish, Grilled Red Snapper, Grilled Red Snapper with Sauteed Vegetables, Baked Red Snapper, Quick Friday Special,

Here are a few red snapper recipes shared with our daily recipe list by Shirley. I live right on the Gulf of Mexico and go out 2-3 times per week deep sea fish when the weather permits. So, I'll definitely be trying some of these recipes.

These are ideas for side dishes:
Potato Salad, Macaroni Salad
Simple green salad, cole slaw
Fries, hush puppies
French Bread, or dinner rolls or biscuits

QUICK GRILLED FISH

Red snapper or orange roughy
1/2 stick melted butter
2 cloves garlic
Salt and pepper and lemon juice
Lemon pepper
Rinse fish, pat dry. Spread a double layer of aluminum foil on a
cookie sheet. Spread fish on foil. Mix garlic and butter together
and pour over the fish. Salt and pepper to taste. Squeeze o some
lemon juice. Sprinkle with lemon pepper. Garnish with parsley.
Bake at 375 degrees for 8 or 10 minutes.

GRILLED RED SNAPPER

1 red snapper
Char-grill seasoning
Lemon pepper
Garlic powder
Salt & pepper
Soy sauce
Lime slices (optional)

Cut 2 slits across red snapper on both sides. Sprinkle one side
liberally with soy sauce, salt, pepper, char-grill seasoning,
lemon pepper and garlic powder. Place 2 or 3 lime slices over
fish.
Place fish, seasoned side down, on basket for grilling. Season
other side of fish the same as the first side. Clamp fish in
basket and grill over the charcoal about 15 minutes on each side
or until fish flakes easily.

This recipe has more ingredients,

GRILLED RED SNAPPER WITH SAUTEED VEGETABLES

Lime Butter Sauce
1 med. onion, finely chopped (about 1/2 c.)
2 cloves garlic, finely chopped
1/4 c. butter

4 very sm. patty pan squash (about 4 oz. each) cut in half
2 sm. zucchini, cut into 1/4" strips
2 sm. yellow squash, cut into 1/4" strips
1 med. chayote, pared, seeded & cut into 1/2" cubes
1 sm. red bell pepper, cut into thin rings
1 sm. yellow bell pepper, cut into thin rings
1/2 tsp. salt
1/4 tsp. ground red pepper
8 red snapper or cod fillets (about 5 oz. each)
1/4 c. vegetable oil
Salt & pepper to taste

Prepare Lime Butter Sauce; reserve. Cook and stir onion and
garlic in butter in 4 quart Dutch oven until onion is tender.
Stir in vegetables, 1/2 teaspoon salt and the red pepper.
Cook over medium heat, stirring occasionally, until vegetables
are crisp-tender; keep warm.

Brush fish fillets generously with oil. Sprinkle with salt and
pepper.
Grill over medium coals 10-12 minutes or until fish flakes
easily with fork. Serve with vegetables and Lime Butter Sauce.
8 servings.

BAKED:

BAKED RED SNAPPER

1 (4 lb.) red snapper
Salt, pepper & cayenne to taste
1/2 c. slivered almonds
Paprika
2 sticks butter
1 lemon
1/3 c. parsley, minced

Fillet fish. Cut into 1" pieces. Season with salt, pepper and
cayenne pepper. Put 1 stick butter on bottom and sides of pan
and place fish in pan. Sprinkle with lemon juice and paprika.
Preheat oven to 350 degrees and bake for 30 minutes. Melt 1
stick butter; add almonds and pour over fish. Return to oven
for 10 minutes. Add parsley for garnish.

QUICK FRIDAY SPECIAL

Butter
1 fish fillet or thin fish steak per person (sole, red snapper,
etc.)Flour
1/4 c. minced onion
Salt and pepper
1/4 c. butter, melted
Juice of 1/2 lemon
1/2 c. California white table wine
Chopped parsley
Lemon wedges

Heat oven to 450 degrees. Line shallow baking pan with foil
(makes cleaning a cinch); place in hot oven. When hot, brush
pan well with butter; arrange fish in pan. Dot each piece with
butter; sprinkle lightly with flour, onion, salt and pepper.
Combine 1/4 cup melted butter, lemon juice and wine.

Bake fish in hot oven (450 degrees) about 10-15 minutes, basting
frequently with butter-wine mixture. Serve with chopped parsley
and lemon wedges. Since this is a quick meal, we usually have
this dish with French fried potatoes, a crisp green salad and
French bread
