Easy Country Cobbler


Easy Country Cobbler

1 stick butter
1 1/2 lb fruit of choice (I use one large can of fruit, drained)
1 c. self-rising flour
1 c. milk
1 egg
1 c. sugar
1 t. vanilla
(To help remember this recipe, it's just one of everything)

Place stick of butter in medium saucepan; as the butter melts, drain and cut the fruit into 1" pieces. Allow this mixture to slowly simmer (not boil) while you mix up the batter. In another bowl, combine the remaining ingredients and mix until a smooth, glossy batter is produced. Pour the batter into a rectangular pan (I use glass). Then pour the fruit/butter mixture into the batter moving the saucepan up and down to evenly distribute the fruit/butter mixture. You may even want to run a spatula through the pan to evenly distribute, but not combine, the two mixtures. Bake in a preheated 350 degree oven for approximately 45 minutes; check on it at 30 minutes because all ovens vary.

My favorite fruit to use in this recipe is pear. Another way to use this recipe is to allow it to cool completely, then cut it into 2" squares and stack the squares on a serving plate for a quick finger dessert to serve at parties. My sister sprinkles powdered sugar over the squares before stacking them for an added look. Enjoy!!!
