One Skillet Beef Hash
1 pound ground beef
1 small onion, chopped
3 cups western style hash browns
salt and pepper, to taste
1 cup salsa
1/4 cup each sliced green onion and black olives, optional
In large skillet, brown ground beef over medium heat for 8 to 10
minutes or until no longer pink; pour off drippings. Stir in chopped
onions, potatoes, salt and pepper. Increase heat to medium-high
and cook five minutes, stirring occasionally. Stir in salsa and continue
cooking 8 to 10 minutes or until potatoes are lightly brown, stirring
occasionally. Garnish with green onions and olives. 4 hearty servings.
