Old Fashioned Tea Cakes (2 Recipes)

Old Fashioned Tea Cakes
Makes 24 cakes

Ingredients

1 cup butter
1-3/4 cups white sugar
2 large eggs
3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon
vanilla extract

Directions

In a medium bowl, cream together the butter and
sugar until smooth. Beat in the eggs one at a
time, then stir in the vanilla. Combine the flour,
baking soda, salt and nutmeg; stir into the creamed
mixture. Knead dough for a few turns on a floured
board until smooth. Cover and refrigerate until firm.
Preheat the oven to 325°F. On a lightly floured
surface, roll the dough out to 1/4 inch in thickness.
Cut into desired shapes with cookie cutters. Place
cookies 1-1/2 inches apart onto cookie sheets. Bake
for 8 to 10 minutes in the preheated oven. Allow
cookies to cool on baking sheet for 5 minutes
before removing to a wire rack to cool completely.

Makes about 6 dozen
Ingredients

1 cup sugar
1 cup butter
2 large eggs
1 tablespoon water
1 teaspoon vanilla
dash of salt
1 teaspoon baking powder
4 cups all-purpose flour

Directions

Cream sugar and butter. Add the eggs, alternately,
beating after each addition. Add the water and vanilla.
Sift the dry ingredients together and mix into creamed
mixture. Cover and chill 1 hour. Preheat oven to 350°F.
Roll out the chilled dough to a thickness of slightly
less than 1/4 inch. Use a 2-inch biscuit cutter or a
glass to make cookies. Place on ungreased baking sheet
and bake for 12 to 15 minutes or until golden brown.
