Chopped Chicken Livers
CHOPPED CHICKEN LIVERS
1 lb. chicken livers
1 large onion, chopped
2 hard-boiled eggs
1/4 c. oil (not olive oil)
salt and pepper
oil for sauteing
Saute chicken livers and onion in a little oil until brown. When cool,
add eggs and grind all together. Add oil; mix well and refrigerate. Add
salt and pepper when ready to serve, otherwise liver becomes hard. Serve
with lettuce, tomato and crackers, if desired
