Coconut Pie


Coconut Pie
3/4 cup sugar
2 tablespoons of cornstarch
2 cups of milk
pinch of salt (how's that for accuracy!)
3 eggs separated
1 can of coconut
1 tsp of vanilla
1 baked pie shell

Mix sugar and cornstarch

Add milk, salt, and egg yolks
Cook over low heat until thickened
Add coconut and vanilla
Beat egg whites until stiff
Add 1/2 cup of sugar gradually
Sprinkle with coconut Bake at 300° until brown

If you've ever blamed stress for new wrinkles or gray
hairs, you may have been right. There’s now strong
proof long-term stress makes us grow old before our
time. But - there's also new proof that a positive
outlook can reduce impact of stress on your health. It
cannot ravage the body if your the mind says "no."

The Physical Impact of Stress Want a reason to
introduce serious stress reduction into your lifestyle?

Studies show that high levels of stress can lead to
obesity, and definitely trigger a raft of diseases from
heart attacks and cancer - to ulcers, colitis, and all
the age-related disorders like arthritis. The Center
for Disease Control and Prevention claims as much as
90% of doctor visits in the USA are triggered by a
stress related illness.

When you get hit by stress, your adrenal glands crank
out powerful hormones such as adrenaline that drive
your blood pressure up. And with chronic stress, those
hormones stay at dangerously high levels.

New research has shown that over-the-top stress goes
beyond a temporary increase in blood pressure, and
actually injures (and often kills) the cells of your
body and brain. This accelerates the aging process,
leaving you prone to a long list of diseases.

Dr Elissa Epel of University of California in San
Francisco studied women suffering from the intense
stress of caring for chronically ill children. Her
study looked deep inside their cells to determine if
stress was affecting a key part of their chromosomes
called a "telomere."

Telomeres cap the ends of the chromosomes containing
your body's DNA, and are recognized markers of aging.
As people get older this cap gets ground down. When the
telomere gets too short to work properly, cells all
over your body start to sicken or die -- and the
diseases of old age set in.

Epel's research team found that the longer a woman had
cared for a child with a serious illness, the shorter
her telomere -- a finding that points straight to rapid
aging. "It's very sad," Epel says. "These women are
paying an intense personal price."

But this premature aging response was not confined to
caregivers: The study also studied mothers of healthy
kids. Most of the women in this group did not report
burn-out stress level. But those that did also had
shorter telomeres, and the related premature aging
response.

When the researchers looked at the stressed-out women
in both group, they found dramatic signs of damage.
"They had lost the amount of telomeric DNA one would
expect to lose in 10 years of aging," Dr. Epel says.

Proof a Positive Attitude Prevents Aging We all have
stressful things happen to us - loss of a job, a
natural disaster, a divorce, a car accident. But does
that type of stress doom us to DNA damage? Probably
not. Providing you resolve the stressful situation and
it does not become chronic, you can rebound and further
develop your resilience and stress resistance.

The women in Dr Epel's study who viewed their situation
positively didn't seem to suffer the ill effects of
stress. A positive outlook on life, a regular
stress-management regime, and the support of friends
can help buffer the potential damage of ongoing stress,
Epel recommends.

Lengthen Your Life A great way to reduce your stress
and slow down the aging process is laughter. Laughter
protects your nervous system and gives your endocrine
system a much-needed rest, all at the same time. It’s
actually a tremendous healing activity.

When you laugh you boost your immune system, clear
waste products out of your internal organs and tissues,
and increase the oxygen in your body at both cellular
and organ levels. (It's interesting to note that cancer
cells die in the presence of oxygen.)

Maybe you have Adware and Spyware on your Windows XP system and don't know it?

Possibly, it's a bit of both.

Dirty Rice

Dirty Rice

1/4 lb hot pork sausage
1 lb ground beef
cayenne pepper, to taste
black pepper, to taste
salt, to taste
1 chopped onion
2 stalks celery, chopped
1/2 green bell pepper, chopped
1 1/2 cups cooked long grain rice (Mahatma brand)


In a large skillet, brown the sausage and ground beef over medium heat.
Add cayenne pepper, black pepper and salt to taste.
Add onion, celery, and green pepper and cook until tender.
About 5 minutes.
Stir in cooked rice and serve.
Makes 4 serving

Homemade Mayonnaise

Homemade Mayonnaise

1/2 teaspoon dry mustard
1/4 teaspoon paprika
dash ground red pepper
2 egg yolks
2 tablespoons vinegar
2 cups oil
2 tablespoons lemon juice

In a small mixer bowl combine mustard, paprika, red pepper, and 1
teaspoon salt. Add egg yolks and vinegar; beat mixture at medium speed
of electric mixer till combined. Add the oil, 1 teaspoon at a time,
beating constantly. Continue adding oil 1 teaspoon at a time and
beating mixture till 1/4 cup oil has been added. While continuing to
beat, add the remaining oil in a thin, steady stream, alternating the
last 1/2 cup oil with the lemon juice.

Store for up to 4 weeks in a tightly covered jar in the refrigerator.
Makes about 2 cups.

Florida Bracing For Hurricane Wilma

It looks like Hurricane Wilma will hit southeast Florida on Monday now. I'm way up in the northwest corner of the state and the wind outside my house is howling.

As Hurricane Wilma crossed the Gulf of Mexico, she's expected to absorb heat from the warm Gulf waters and pick up speed. Hurricane Wilma's a category II storm right now... or was the last time that I check, but could easily build back up to a category 5 storm by time she hits Florida. Lets hope not!

Chocolate Mayonnaise Cake

Chocolate Mayonnaise Cake

This is a wonderfully moist cake!

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup cocoa
2 teaspoons baking soda
1 teaspoon vanilla extract
1 cup mayonnaise
1 cup warm water

Blend all ingredients with mixer 2 to 3 minutes and pour into greased round
cake pans. Bake at 350 degrees F for about 25 minutes.

Easy Peach Cobbler


Easy Peach Cobbler

1 stick butter or margarine
1 cup selfrising flour
1 cup sugar
1 cup milk 2% or whole
1 large can sliced peaches lite or heavy syrup

Melt butter in a 9 x 13 pan, mix sugar and flour together and add milk and
pour over the melted butter, then pour the peaches over the mixture and bake
at 350 degrees for about 20 to 25 minutes or until lighty browned.
This recipe don't have many ingredients and it's very tasty and easy!!

Hurricane Wilma "The Most Intense Atlantic Hurricane On Record!"

Meet Hurricane Wilma, the most intense Atlantic hurricane ON RECORD.

They're already evacuating the Florida Keys but it's difficult to
predict a storms exact part. They can look at current and winds
aloft and get a pretty good idea though.

In northwest Florida, we haven't really made any preparations yet.
Most of us still have supplies from the when we prepared for the
last 5 or 6 storms to hammer the state. My generate still has gas
in it :-)

Let's hope it fizzles while still out in the middle of the ocean.
If it hits my part of the state I plan on evacuating this time
since I've already ridden out 2 category 4 hurricanes and they're
NO FUN. You sit listening to the winds and wonder if the house
is going to collapse :-)

Chopped Chicken Livers


CHOPPED CHICKEN LIVERS
1 lb. chicken livers
1 large onion, chopped
2 hard-boiled eggs
1/4 c. oil (not olive oil)
salt and pepper
oil for sauteing

Saute chicken livers and onion in a little oil until brown. When cool,
add eggs and grind all together. Add oil; mix well and refrigerate. Add
salt and pepper when ready to serve, otherwise liver becomes hard. Serve
with lettuce, tomato and crackers, if desired

Whipped Sweet Potato Pie

Whipped Sweet Potato Pie
Makes 2 pies

Ingredients

2 pie shells (Marie Callender is nice and flaky)
2-1/4 cups cooked sweet potatoes (mashed)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 package French Vanilla instant pudding
1 can sweetened condensed milk
2 large eggs (room temperature)
1 teaspoon cinnamon
1-1/2 tablespoons vanilla extract

Directions

Mix all of above together and beat until well blended.
Bake at 350°F for about 40 minutes or until set. Let
cool and serve with ice cream or whipped cream.
Note: I bake my potatoes and let them cool
completely before mashing.

Cajun Seafood Gumbo

Cajun Seafood Gumbo --
12 oz. fresh or frozen peeled and deveined shrimp
6 oz. fresh or frozen crabmeat
1/3 cup all purpose flour
1/4 cup cooking oil
1/2 cup chopped onion
1/2 cup chopped red sweet pepper
1/2 cup chopped green sweet pepper
4 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. ground red pepper
3 cups chicken broth, heated
1 can 14-1/2 oz.) tomatoes, cut up
1-1/2 cups sliced okra or 1 pkg. (10 oz.) frozen cut okra
2 bay leaves
1/2 pint shucked oysters, drained
3 cups hot cooked rice

1. Thaw shrimp and crab, if frozen. For roux, in a large heavy
saucepan or Dutch oven combine flour and oil until smooth. Cook
over medium-high heat for 5 minutes, stirring constantly. Reduce
heat to medium. Cook and stir about 10 minutes more or until roux
is light reddish brown.

2. Stir in onion, red sweet pepper, green sweet pepper, garlic, salt,
black pepper, and ground red pepper. Cook over medium heat for 3 to 5
minutes or until vegetables are just crisp-tender, stirring often.

3. Gradually stir in hot chicken broth. Stir in undrained
tomatoes, okra, and bay leaves. Bring to boiling. Reduce heat and
simmer,
covered, for 30 minutes.

4. Stir in shrimp, crabmeat, and oysters. Simmer, covered, about 5
minutes more or until shrimp turn opaque and oysters curl around
the edges. Discard bay leaves. Serve in bowls with rice.

Makes 6 servings.

2 pkgs. of raspberry kool aid
4 cups water
1 pkg of sure jell or any pectin
5 cups sugar
1 tsp. lemon juice[optional]
mix kool aid,water,and sure jell.bring to boil,add sugar bring back to boil and boilat least 1 full minute.skim off foam,pour into half pint jars and seal wipe tops off before you seal
enjoy

Cornbread Salad


CORNBREAD SALAD

8-inch pan of cornbread
1 can washed and drained pinto beans
1 cup chopped onions
1 cup chopped bell pepper
2 cups chopped tomatoes
1/2 cup chopped sweet pickles
1/2 cup chopped dill pickles
3 cups mayonnaise
1/2 cup sweet pickle juice
1/2 cup dill pickle juice
Bac*Os or six slices bacon, cooked and crumbled

Cook cornbread. Crumble and put in large casserole dish. Layer the following
ingredients on top of cornbread: pinto beans, onions, bell pepper, tomatoes
and sweet/dill pickles. Whip mayonnaise with pickle juice and spread on top.
Spread Bac*Os or crumbled bacon on top. Cover and chill 2 hours. I let mine
chill overnight. Toss before serving.

Maple Syrup Pie

Maple Syrup Pie

2 eggs
1 cup brown sugar
2 tbsp. all-purpose flour
1 cup maple syrup
2 tbsp. butter, melted
1 tsp. vanilla 1/2 cup nuts, chopped ( I use pecans)
pinch salt
1 unbaked pie shell

Combine first three ingredients in a large bowl. Mix well and
add remaining ingredients. Pour into pie shell and bake in a
preheated 400* oven for 35 to 40 minutes.

Stuffed Bell Peppers

Stuffed Bell Peppers

This is an easy recipe that we use often at our house.

Ingredients:
4 large bell peppers
1 lb roll sausage
1 1/2 cups cracker crumbs
1 cup finely chopped onion
Directions:
Preheat oven to 350F. Slice the top off the peppers and remove the seeds and inner membranes. In a bowl blend the other ingredients and stuff this into the empty peppers. Replace pepper tops aftetr filling any cavities with the stuffing. Place peppers on a baking sheet, place this in oven and cook for 15 to 20 minutes. If you have leftover stufing you can add some egg and fry this as a frittata.

Best Ever Corn Pudding

Best Ever Corn Pudding

2 eggs beaten
1 tablespoon flour
3 tbs butter or margarine melted
1/3 cup sugar
1 cup milk
1 tbs vanilla
1/2 tsp salt
1 can corn drained

Mix all the ingredients except the corn. Blend well, add the corn and mix.
Pour into a greased (I used the spray stuff) baking dish and bake in
preheated 400 degree oven 40 minutes. This recipe doubles or triples very
easily.

Pigs Feet - 2 Recipes

Pig's Feet
Serves 2

Ingredients
6 pig's feet
1 whole onion stuck with 6 cloves
1 carrot, sliced (not too thin)
1 bay leaf
12 peppercorns (or 1/4 teaspoon black pepper)
salt, to taste
1 bunch parsley
1 sprig thyme
Directions

Place cleaned pig's feet, onion, carrot,
bay leaf, peppercorns, salt, parsley, and
thyme in a heavy pot and cover with water.
Slowly bring to a boil; reduce to simmer
for at least 3 hours. Serve cabbage as
a side dish.

Very good served with rice.

Ingredients

8-10 pigs feet, cleaned
1/2 cup onions, chopped
1/3 cup celery, sliced
1 small green pepper, sliced
1 teaspoon salt
1 teaspoon seasoned salt
1 teaspoon crushed red pepper
1 cup vinegar
4 cups water
1 (15-ounce) can tomato sauce

Directions

Place pig's feet, onion, celery, green pepper,
seasonings and vinegar in 8 quart pot. Add 4
cups water or enough to cover pigs feet. Bring
to a boil; reduce to medium heat. Cook 3 hours
or until pork is tender and meat starts to pull
away from bone. Stir in tomato sauce and simmer
about 15 minutes. Serve immediately.

Old-Fashioned Cornbread Dressing

Old-Fashioned Cornbread Dressing
Serves 8

I love dressing and I make it often.

Ingredients

2 cups self-rising cornmeal
2 large eggs beaten
2 cups buttermilk (a must!)
2 tablespoons bacon drippings, melted
3 stalks celery, chopped
1 medium onion, chopped
1/3 cup butter, melted
12 slices day old bread, crumbled
2 to 2-1/2 cups turkey or chicken broth
1 cup milk
2 large eggs, beaten
1/4 teaspoon salt
1 teaspoon poultry seasoning
1/2 teaspoon rubbed sage
1/4 teaspoon pepper

Directions

Combine cornmeal, 2 eggs, buttermilk, and
melted bacon drippings, stirring well.
Place in a well-greased 10-inch cast iron
skillet in a 450°F for 5 minutes or until hot.
Remove skillet from oven and spoon in the
batter. Bake for 35 minutes or until cornbread
is lightly browned. Cool completely. Crumble
cornbread into a large bowl. Saute celery and
onion in butter until tender. Add sautéed
vegetables and remaining ingredients to crumbled
cornbread, stirring well. Spoon dressing into
a lightly greased 13x9x2-inch pan. Bake at 350°F
for 25 to 30 minutes. Note: I usually make my
cornbread a day ahead so it can "dry out."

Monkey Bread

Monkey Bread

1 package dry yeast
1/2 cup very warm water
1 cup butter or margarine
1/4 cup sugar
1 teaspoon salt
1/2 cup evaporated milk
3 1/2 cups sifted flour

Sprinkle yeast into water in a large bowl. Stir. Melt 1/2 cup butter, stir in sugar, salt and milk. Add to yeast. Beat in flour all at once and knead. Cover with a clean towel and let rise 1 hour. Melt remaining 1/2 cup butter, punch down dough. Roll out on a lightly floured board, cut into diamonds 3 inches each. Dip into melted butter, over lapping in ungreased 12 cup tube mold. Cover. Let rise 1 hour. Bake at 350F for 45 minutes.

Louisiana Crunch Cake


Louisiana Crunch Cake
2 3/4 cups flour, sifted
2 teaspoons baking powder
1 1/2 teaspoons salt
1 3/4 cups granulated sugar
1 cup shortening
3/4 cup milk
1 teaspoon orange extract
1/2 teaspoon almond extract
3 eggs, unbeaten
.
Topping
2 tablespoons flour
3 tablespoons brown sugar
3 tablespoons confectioners' sugar
1/4 teaspoon orange extract
1/4 teaspoon finely grated orange peel
1/2 cup chopped pecans

PREPARATION:
Sift together 2 3/4 cups flour, baking powder and salt into large mixing bowl. add granulated sugar and stir. Cut in shortening. Add milk, 1 teaspoon orange extract, almond extract, and eggs. Beat thoroughly.

Combine 3/4 cup of the batter with 2 tablespoons flour, brown sugar, confectioners' sugar, orange extract, and orange rind. Mix well. Spread topping in bottom of well-greased tube pan. Pour remaining batter over top and bake at 375° for 45 minutes to 1 hour. Remove cake from pan immediately so topping won't stick

Old Fashioned Chicken and Dumplings

Old Fashioned Chicken and Dumplings

1 (about 3 lbs) broiler-fryer, cut up
1 Tbsp. salt
1/4 tsp. pepper
1 medium onion, halved
6 c. water

Dumplings
2 c. self rising flour
1 tsp. salt
2 beaten eggs
1/2 tsp. pepper
1 Tbsp. shortening
1/2 - 3/4 c. ice water

Combine chicken, onion, salt, pepper and water in a Dutch oven. Bring to boil, cover and simmer 2 hours or until chicken is tender. Remove chicken from broth. Cool, bone and remove skin. Add water to broth to measure 6 cups. Return chicken to broth and bring to boil.

While chicken is cooking, make and chill dumplings. Blend Crisco in flour with a pastry blender. Add ice water to form soft dough. Turn dough out on lightly floured board. Kneed gently 30 seconds. Roll dough to 1/8 inch thickness and cut into 1/2 x 4 inch strips. Place on paper towel-lined shallow pan. Chill in refrigerator until chicken is tender. Dumplings may be frozen before putting into boiling broth. Cover Dutch oven, reduce heat and cook 30 minutes covered. Makes 8 servings.

Bacon Topped Meatloaf

Bacon Topped Meatloaf

1/2 cup chili sauce
2 eggs, slightly beaten
1 tbs worcestershire sauce
1 medium onion, chopped
1 cup shredded cheddar cheese
2/3 cup dry bread crumbs
1/2 tsp salt
1/4 tsp. pepper
2 lbs lean ground beef
2 bacon strips, halved
In a bowl, combine the first eight ingredients. Crumble beef over mixture and mix well.
shape into a loaf in an ungreased 13-in.x9-in.x2in. baking dish. Top with bacon.Bake uncovered, at 350' for 70-80 mins or until meat is no longer pink and a meat thermometer reads 160'. Drain; let stand for 10 mins before cutting.

Hot Water Cornbread

Hot Water Cornbread

These cornbread patties are so
good with cabbage and greens.

Ingredients

1 cup cornmeal
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon shortening
3/4 cup boiling water

Directions

In a medium bowl, combine cornmeal, salt, and
sugar. Add boiling water and shortening; stir
until shortening melts. Add 1/2-inch oil
or bacon fat to a large skillet and heat until
hot, but not smoking. Shape cornmeal mixture
into flattened balls using a heaping tablespoon.
Fry each in hot oil, turning once, until crisp
