Pigs Feet - 2 Recipes
Pig's Feet
Serves 2
Ingredients
6 pig's feet
1 whole onion stuck with 6 cloves
1 carrot, sliced (not too thin)
1 bay leaf
12 peppercorns (or 1/4 teaspoon black pepper)
salt, to taste
1 bunch parsley
1 sprig thyme
Directions
Place cleaned pig's feet, onion, carrot,
bay leaf, peppercorns, salt, parsley, and
thyme in a heavy pot and cover with water.
Slowly bring to a boil; reduce to simmer
for at least 3 hours. Serve cabbage as
a side dish.
Pig's Feet
Serves 4
Very good served with rice.
Ingredients
8-10 pigs feet, cleaned
1/2 cup onions, chopped
1/3 cup celery, sliced
1 small green pepper, sliced
1 teaspoon salt
1 teaspoon seasoned salt
1 teaspoon crushed red pepper
1 cup vinegar
4 cups water
1 (15-ounce) can tomato sauce
Directions
Place pig's feet, onion, celery, green pepper,
seasonings and vinegar in 8 quart pot. Add 4
cups water or enough to cover pigs feet. Bring
to a boil; reduce to medium heat. Cook 3 hours
or until pork is tender and meat starts to pull
away from bone. Stir in tomato sauce and simmer
about 15 minutes. Serve immediately.
