Stuffed Bell Peppers

Stuffed Bell Peppers

This is an easy recipe that we use often at our house.

Ingredients:
4 large bell peppers
1 lb roll sausage
1 1/2 cups cracker crumbs
1 cup finely chopped onion
Directions:
Preheat oven to 350F. Slice the top off the peppers and remove the seeds and inner membranes. In a bowl blend the other ingredients and stuff this into the empty peppers. Replace pepper tops aftetr filling any cavities with the stuffing. Place peppers on a baking sheet, place this in oven and cook for 15 to 20 minutes. If you have leftover stufing you can add some egg and fry this as a frittata.
