Chicken And Dumpling (Using Bisquick)

Chicken & dumplings

I just made a huge pot of this yesterday and it is so very good.

I use a very large pot to make sure I have enough to feed my family and then give some away to others that love it.

Cook two large packages of chicken thighs, or one small one, depending on how much chicken you like, in about 6 or 7 cans of non fat chicken broth. Cover the chicken with the broth. Chop up some onions, garlic flakes, salt, pepper and about 4 tablespoons of Italian seasoning.

For the dumplings I use Bisquick. It works the best I have found.

I boil my stock and just start adding tablespoons of dumpling mix (and I mix it with milk) and really put in a lot. I keep pushing down the dumplings to I can get a lot into them.

The mix makes the stock thicker and very delicious. Just follow the directions on the Bisquick box to make the dumplings.
