GREAT Greens Recipe - Works With Mustards, Turnips or Collards

Howdy, Willie! I'm happy to have a recipe resource like yours and I
want to contribute, if I may. My old man told me about this and after
trying it myself, I thought it certainly worth sharing. The source is
Martha Stewart, if you can imagine.

This was originally written for collards, but I've tried it with
mustards, collards, turnips greens, etc. and it's been wonderful for
all, and combined.

3 ounces Bacon, cut into quarter-inch pieces
1 med. Onion
2 tbs olive oil
Splash of Red Wine Vinegar
1 lb. Collards (Mustards and Turnip Greens work famously, too)
1 3/4 cups Chicken Stock
Course Salt and Fresh Ground Pepper


In a large, straight-sided skillet, combine bacon, onion and oil over
medium-high heat. Cook, stirring occasionally until the onions are
translucent the bacon renders some fat. Season with salt and pepper.
Add the red wine vinegar to de-glaze the skillet, and cook until it
evaporates. Add the greens and stock and bring to a boil. Cover and
cook 15 minutes. Enjoy!
