Crawfish Dip
CRAWFISH DIP

1 stick Butter or Oleo
1/2 Cup chopped bell peppers
1 Cup chopped onions
1 Can diced Rotel tomatoes
1 Can cream of mushroom soup
1 Small Velveeta, cut into cubes
1 Pound crawfish tails
2 Tbls. Chopped green onions
Salt and pepper to taste
Heat oleo over medium heat in large skillet. Saute bell
peppers and onions for 6-8 min. or until
wilted. Add Rotel and cook for 30 min., stirring occasionally.
Add soup and cook again for 30
min., stirring occasionally. Add cheese and let it melt
thoroughly. Add crawfish and cook for
15 min., stirring occasionally. Add green onions. Season to
taste. Serve with any kind of chips or crackers.
