New England Baked Beans

I used to cook my beans for eight hours in a 325 degree oven in a bean pot, until utilities in California got too expensive.  Then someone told me to cook them on low for 24 hours in a crockpot, and they come out the same as if they were cooked for eight hours in an oven.  (I'm originally from Maine and this is a combination of my mother's recipe and mine)
 
1 lb. small white beans
1/4 to 1/2 lb. lean salt pork (rinse salt off pork)
1tsp. dry mustard
salt & pepper (go easy on salt)
1/4 cup molasses
1 whole onion
 
Clean out bad beans, rocks and etc. from beans and rinse in a colander.  Place beans in large bowl, and cover with cold water for at least 8 hours.  I usually do this all day.  Then drain water and rinse.  Place beans in large cook pan, cover with water, and bring to a boil.  Turn heat down and simmer for 10 minutes.  Then empty water out, and place beans and other ingredients in crockpot.  Cut salt pork in three pieces, and add onion whole.  Cover beans with water and cook on low for 24 hours.  Add water as needed, but try not to add it the last 4-5 hours.  Remove the whole onion as it soaks up excess fat.
 
I usually cook hot dogs and onions in oil to serve with the beans, pickled beets, cole slaw and dinner rolls with butter.  Now that's what we had for dinner Saturday night's in Maine when I was growing up!!  Everyone I knew made beans on Saturday.

Crockpot Cola Roast

Crockpot Cola Roast

4      pounds        Bottom round roast
   1      teaspoon      Salt
     1/2  teaspoon      Pepper
     1/2  teaspoon      Garlic powder
   3      tablespoons   Vegetable oil
   1 1/2  cups          Cola
  12      ounces        Chili sauce
   2      tablespoons   Worcestershire sauce
   2      tablespoons   Hot sauce
 
     Combine salt, pepper and garlic powder; rub over surface of roast. If
 desired, brown roast on all sides in vegetable oil in Dutch oven. Drain 
off drippings. Place roast in crockpot.     Combine remaining ingredients 
and pour over roast. Cover with lid; cook on high (325~) for 3 hours or
until tender.

Crockpot Lasagna

Crockpot Lasagna

Yield: 6-8 servings
 
1 pound ground beef or turkey
1 medium onion, chopped
1 (approx. 26 oz) jar your favorite spaghetti sauce
1 (12 oz) container cottage cheese
1/2 cup grated parmesan cheese
1 egg
12 ounces lasagna noodles (no need to cook!)
1 1/2 cups shredded mozzarella cheese, reserve 1/2 cup
 
Brown meat and onion in skillet. Drain.
Add jar of spaghetti sauce and simmer for 5 to 10 minutes.
 
In a separate bowl, combine all the cottage cheese, parmesan 
cheese, mozzarella cheese (except reserved 1/2 cup) and the
egg.
Mix thoroughly.
 
Spoon a layer of meat sauce onto the bottom of crockpot.
Add *two* layers of uncooked lasagna noodles (you will need
to break into small pieces to make them fit) and then top with
cheese mixture.
Repeat with sauce, noodles, and cheese mixture until all are used.
Sprinkle reserved 1/2 cup shredded mozzarella on very top.
 
Cover and cook on low for 6-8 hours or on high for approximately
3 hours.

Crockpot Sloppy Joes

CROCKPOT SLOPPY JOES

3 pounds Ground beef
2 tablespoons Shortening
1 cup Onion -- chopped
1 cup Celery -- diced
1 Green pepper -- chopped
1 large Garlic clove -- minced
2 tablespoons Worcestershire sauce
1 cup Catsup
3 Beef bouillon cubes -- crushed
1/2 teaspoon Paprika
1/4 teaspoon Pepper
1 can Tomato paste -- 6 0z.
1 1/4 cups Water
3 tablespoons Vinegar
3 teaspoons Brown sugar
1 teaspoon Dry mustard
 
Heat shortening in skillet and brown meat, discard fat.
Combine all ingredients in removable liner, stirring well. Place liner in base. Cover and cook on low 6-8 hours; or high 3-4 hours; or auto 5 hours. Serve over warmed burger buns or noodles.

Crockpot Hobo Dinner
 
1. In a large frying pan, combine:
 
5 - 6 bratwurst, kielbasa, or Italian sausage
1/2 c. water
 
2. Cook over medium high heat for about 5 minutes, until partially done,
turning frequently.
 
3. Add additional water if needed.
 
4. Remove sausage from pan and set aside.
 
5. In the same pan, cook until slightly soft:
 
1 small head cabbage, sliced into bite-size pieces
1 lg. sweet onion, sliced
1 lg. clove garlic, chopped
1 t. seasoning blend, such as Nature's Seasoning(tm) or Mrs. Dash(tm)
1 t. Old Bay seasoning
 
6. Put prepared sausage in bottom of large (5 -6 qt.) crockpot.
 
7. Add cabbage mixture, then place top with:
 
6 ears of corn, cut in half
 
8. Cook on low setting for 4-5 hours.

Crockpot Roast Beef

TO DIE FOR CROCKPOT BEEF ROAST

1 Beef Roast, any kind, any size to fit your crockpot 1 pkg. Hidden
Valley Ranch Dressing
1 pkg. Italian Dressing Mix
1 pkg. brown gravy mix
1/2 cup warm water                          
      ~~~~~~~~~~~ Place roast in crockpot. Mix all 3 envelopes
together and sprinkle on top of roast. Pour 1/2 warm water in bottom of
crockpot. Cook on low 6 to 7 hours. Enjoy!
